
Easy Creamy Chicken Potato Soup

There’s just something magical about a pot of soup bubbling away on the stove, filling the house with cozy, comforting aromas—especially on a chilly evening. While many people think of fall and winter as "Soup Season," I’m one of those who can enjoy a good soup any time of the year. It’s the perfect way to use up leftovers and get a little creative in the kitchen!
For me, a great soup is all about following a simple formula: broth as your base, some protein, veggies, a carb (if you want), and then a fun topping to pull it all together. That’s it! Once you have those basics, the possibilities are endless.

This creamy chicken and potato soup is a perfect example. I used homemade bone broth, leftover roasted chicken, potatoes, onions, carrots, and a splash of cream to make it rich and satisfying. And of course, it wouldn’t be complete without a sprinkle of sharp cheddar on top! It’s such a simple dish, but it’s bursting with flavor and warmth—just what you need for a cozy night in. Since I threw it together with what I had, the measurements are a bit flexible, but here’s how I made it:
Creamy Chicken and Potato Soup Recipe
Ingredients:
- Roasted Chicken Breast, chopped
- 1 onion, diced
- 1 large carrot, shredded
- 1 tbsp butter (grass-fed is my favorite)
- 2 cups bone broth (store-bought works too!)
- 2 cups water
- ½ cup heavy cream or 1 cup whole milk
- 2 large potatoes, peeled and cubed
- 1 tsp rosemary
- 1 tsp onion powder
- 1 tsp garlic powder
- ½ tsp thyme
- 1 tsp oregano
- 1 tsp basil
- Salt and pepper to taste
- Shredded sharp cheddar cheese
Directions:
- Melt the butter in a large pot over medium heat. Add the onions and sauté until they’re soft and translucent.
- Pour in the bone broth, water, potatoes, and shredded carrot. Let it simmer until the potatoes are nice and tender.
- Add the roasted chicken and all the spices, stirring it all together.
- Just before serving, stir in the cream to give it that rich, creamy texture.
- Ladle it into bowls and top with a generous handful of shredded cheddar cheese.
