Last week, we had our first real snowfall of the season—an impressive 3 to 4 inches! Now, for some of you up north, that might seem like just a dusting, but here, it’s practically a natural disaster. Roads turn into skating rinks, crowded grocery stores and schools? Closed for days. With temperatures dipping into the teens at night, we had the perfect excuse to hibernate indoors, wrap up in cozy blankets, and enjoy a much-needed break with movies and comforting homemade soup.

And since winter is still in full swing, I thought it would be the perfect time to share a soul-warming recipe with you! Whether you're currently watching snowflakes fall or just need a quick and cozy meal, this soup will hit the spot.
This recipe is inspired by the classic Egg Drop Soup but takes it up a notch with heartier textures and richer flavors. If you're used to the thin, one-note version from takeout menus, you’re in for a treat. This version is packed with fresh veggies, protein, and a touch of tasty goodness, making it a satisfying meal on its own.

Cozy & Hearty Egg Drop Soup Recipe
Ingredients:
- 4 cups chicken broth (I prefer bone broth for extra nutrients)
- 1 small onion, diced
- 2 garlic cloves, minced
- 1-2” fresh ginger root, minced
- 1 cup shredded carrots
- 1 bunch baby bok choy, chopped
- 1 cup cooked shredded meat of choice (I used leftover shaved beef)
- Salt and pepper to taste
- 1-2 tablespoons coconut aminos or soy sauce
- 2-4 eggs, lightly whisked

Instructions:
- Melt butter in a soup pot over medium heat. Add the diced onions and sauté until translucent.
- Stir in the garlic, ginger, carrots, and bok choy, cooking for 1-2 minutes until fragrant.
- Pour in the broth, add the cooked meat, and season with coconut aminos or soy sauce. Bring to a gentle boil.
- Slowly drizzle the whisked eggs into the boiling broth while stirring gently—this creates those signature silky ribbons of egg.
- Season with salt and pepper to taste. Serve immediately while it’s hot and comforting.
Optional Additions:
- Want a little kick? Sprinkle in some red pepper flakes.
